I recently watched the two non-box set movies Criterion is streaming ( The Pied Piper was brilliant while A Slightly Pregnant Man only has its English title going for it). I was curious though why there’s such a massive gap between them and Demy’s next film, Lady Oscar?

It sounds like it was a matter of funding. Here's the brief overview provided in the French Film Directors book on Demy:

The 1970s were characterised by an inability to find French producers willing to support his projects, which led him to accept commissions from abroad (The Pied Piper and Lady Oscar) and an adaptation for the television (La Naissance du jour).

Recall also that he had planned to begin Une chambre en ville in 1976 with Catherine Deneuve and Gérard Depardieu before Deneuve dropped out over creative differences.

That’s a bummer and shocking. He seems one of the marketable directors of the period and seems to have mastered making films that look expensive cheaply.
